



Saute onion and 1 large carrot until soft.
Add 1 cup lentils, 2 cups water, basil, parsley, salt, pepper (all to taste), handful halved cherry tomatoes. Simmer for 20 minutes.
*important note: remember to stir every once in a while, keep at low heat, and add more liquid if needed.
Add chopped spinach and 1 teaspoon lemon juice.
Serve over rice and top with herbed goat cheese.
